ZOMBIE


The Zombie cocktail originated in the 1930s during the rise of tiki culture in the United States. It was created by Donn Beach, the founder of the famous Hollywood tiki bar Don the Beachcomber, who is widely regarded as one of the pioneers of tropical style cocktails. According to popular accounts, Beach invented the drink for a customer who needed something to help him recover from a hangover before a business trip. After drinking it, the customer later complained that the potent cocktail had turned him into a “zombie” during his travels, inspiring the drink’s memorable name. The Zombie quickly became known for its exotic presentation, mysterious recipe, and extremely high alcohol content, helping establish tiki cocktails as a defining trend of mid 20th century American nightlife.

The Zombie is traditionally made with several types of rum blended together with fruit juices, syrups, and spices to create a complex tropical flavour. Common ingredients include various dark rums, lime juice, grapefruit juice, cinnamon syrup, falernum (a sweet Caribbean syrup or low-proof liqueur flavoured with lime, ginger, cloves, and almonds), grenadine, bitters, and occasionally absinthe or Pernod for added depth. Because Donn Beach guarded his original recipe closely, many variations later emerged as bartenders attempted to recreate the drink. The cocktail became especially popular during the late 1930s and 1940s as tiki bars spread across America, fuelled by fascination with Polynesian inspired décor, escapism, and post Prohibition cocktail culture. Its popularity surged again after World War II, when returning soldiers and tourists embraced tropical drinks and Hawaiian themed entertainment, making the Zombie one of the most iconic tiki cocktails ever created.

Time: 20 minutes

Serves: 1 cocktail

45ml Puerto rican dark rum

45ml aged Jamaican rum

30ml demerara rum*

22.5ml lime juice

7ml grapefruit juice

7ml cinnamon syrup**

15ml falernum

1 bar spoon absinthe

1 bar spoon grenadine

2 dashes bitters

Garnish: Mint sprigs

*if hard to source, swap in preferred dark rum of choice.

Place hurricane or tiki glass in freezer to frost over and crush some ice.

In cocktail shaker add in all ingredients and then fill with crushed ice, close and give the shaker a rolling shake for 10 seconds just so everything mingles. This is a softer shake as it has crushed ice, you don’t want to dilute it too much. 

Open pour the entire shake ice and all into chilled hurricane glass and then top with more crushed ice and finish with a bit bouquet of fresh mint sprigs on top and metal straw. Enjoy responsibly, this drink packs a punch ABV wise so be careful and stick to no more than 2 in a sitting.

**Cinnamon Syrup

2 cinnamon sticks

1/2 cup caster sugar

1/2 cups water

Place all ingredients into small pot and set over medium heat. Bring to simmer and then allow to gently simmer and bubble away for 10 minutes. Take off heat at and store in airtight container in fridge to steep and use for up to 6 months.
