TURMERIC CHICKEN


This turmeric chicken is a showstopper in the middle of the table surrounded by all your favourite sides. It’s bright yellow in colour from turmeric, but the marinade is a celebration of south east asian seasonings and flavours. The spice definitely penetrates into the chicken through the marinade, and the butterflying of the chicken allows an even cook all over, whilst also a quicker cook time all up.

TURMERIC CHICKEN 〰️

Time: 1 hours hands on + 1 hour marinading

Serves: 5-6 as a main

6 garlic cloves

1 stalk lemongrass, white part, thinly sliced

1 shallot

1/2 long red chilli

1 tbl sp turmeric

1 tea sp gr cumin

1 tea sp mustard powder

1 tea sp onion powder

1 lime, lime juice

1/2 coriander bunch, leaves and stems

Honey, drizzle worth

Neutral oil

Salt, to taste

1 whole chicken

Preheat oven to 190 degrees Celsius.

Place all ingredients except for chicken and blitz into marinade paste. Butterly your chicken to create a flat piece. Rub your marinade into chicken all over and place in fridge wrapped for minimum an hour to marinade.

One marinaded pop into oven and cook for 35 minutes before turning grill onto high and cooking it for 5 more minutes to give it a deep char. Respond oily juices onto chicken a couple times during the cook but before the final grill. Remove from oven and allow to rest for 15 minutes.

Garnish with refresher plate of sliced cucumber.
