PEACHES & CREAM ICE BLOCKS


Making ice blocks at home is brilliant because they’re cheap, customisable and unbelievably handy. My peaches and cream is wonderfully healthier version than the store bought ones using whole ingredients and giving you the ability to control the sugar content. The fresh blitzed peaches really come through and work so well with the honey and coconut cream, making these beauties also a vegan go to (on the premise you’re okay with honey). They’re also super fun to make, and work as a great treat during the summer for yourself or the gathering you have over.

PEACHES & CREAM ICE BLOCKS 〰️

Time: 20 minutes + overnight freezing

Serves: 8 ice blocks

800ml coconut cream

5 yellow peaches

3 tbl sp caster sugar

1 lime, juice and zest separated

Honey

Optional: freeze dried plum powder

In a food processor add peaches, caster sugar and lime juice and blitz into peach puree. Pour into bowl with coconut cream and whisk together drizzling in honey as you go. Now keep adding honey and whisking until you find your sweet balance.

Pour into ice block moulds and then finish with a sprinkling of the freeze dried plum powder. Pop into freezer overnight until completely firm, before finish with reserved lime zest.
