PATATES STO FOURNO


Patates sto fourno, or oven baked potatoes, is a beloved dish among Greeks for several reasons. This delightful texture mimics the comforting feel of home cooked meals that many Greeks cherish.

Traditionally, these potatoes are seasoned with olive oil, lemon, garlic, and an array of herbs, particularly oregano. I have kept mine super simple, sticking with just oregano, but feel free to add in dried parsley, dried rosemary and little bit of dried mint if you like.

PATATES STO FOURNO 〰️

(GREEK OVEN POTATOES)

5 potatoes

1 lemon (zest and juice)

1/2 cup olive oil (+1 tbl sp)

2 tbl sp dr oregano

1 tbl sp cracked black pepper

Sea salt

Preheat you oven to 180 degrees Celsius

Begin by peeling your potatoes and cutting them into long soldier shapes. Place in large roasting tray, large enough to fit them all. Add in your lemon zest, half your lemon juice, 1/2 cup olive oil, oregano, cracked black pepper and dec ent pinch of sea salt. Using your hands roll your potatoes through your marinade.

In a seperate jug mix together your remaining lemon juice, 1/4 cup water and 1 tbl sp olive oil. Quickly mix together with spoon and gently pour into your base of your tray making sure its evenly distributed. Pour to the sides of your potatoes so you don’t wash your spices off. Finish with a pinch of oregano on top and place into oven for 45 minutes or until your potatoes can be skewed easily. Turn oven to 200 degrees Celsius on grill function and allow to brown for 3-5 minutes. Remove and let cool before eating.
