Meet your new favourite non alcoholic showstopper: the lemongrass and apple slushie. Zippy, thirst quenching and cheekily sophisticated without the booze. Crisp apple tang meets bright, citrusy lemongrass for a slurp that’s equal parts refreshment and party trick, but the real hero is that chilli and lemongrass syrup. It wakes the drink up with a silky heat and an aromatic punch that lingers like a wink, balancing sweetness with a gentle chilli nudge and elevating every icy mouthful. Perfect for lazy arvo get togethers, poolside lazing or pretending you’re on vacay in your backyard, this duo makes sober sipping feel deliciously indulgent and just a tiny bit mischievous.

LEMONGRASS & APPLE SLUSHIE 〰️
Time: 20 minutes hands on + overnight freezing
Serves: 1 mocktail
6 medium apple ice cubes (frozen apple juice)
2 regular ice cube
30ml lime juice
22.5ml lemongrass & chilli syrup*
Garnish: lemongrass and lime wheel
Start by freezing you apple ice cubes a day before by pouring 100%,
no added sugar apple juice into medium sized ice trays and freezing
overnight. Also prep your lemongrass and chilli syrup the day before,
recipe below.
When ready place all ingredients into a food processor and blitz until
completely homogenous. You want a smooth pourable slushie. Pour slushie into a chilled glass and top with your garnishes.
If you want to make it boozy, add in 45ml of bourbon or whiskey, or your preferred spirit.
*Lemongrass & Chilli Syrup
1 long red chilli, sliced
1 lon lemongrass, chopped and banged
1 lime, peel
1 cup caster sugar
1 cup cold water
Place all ingredients over medium heat and bring to a high simmer. Once high simmer is reached, remove lime peels and allow to gently simmer for 10 minutes. Pour into container to steep overnight, before straining out pieces before using.
