HEALTHY TUNA MELTS


If there’s one thing that can instantly make my eyes light up on any menu, it’s a tuna melt. Warm, gooey cheese hugging perfectly seasoned tuna on toasted bread,mate, it’s comfort food at its finest. I’m that person who spots a tuna melt and orders it without a second thought. But let’s be honest, traditional tuna melts can be a bit of a health minefield,hello, mountains of mayonnaise and all that melted cheese dripping with extra calories.

That’s why I came up with a healthier twist that still packs all the flavour punch I crave. Instead of drowning the tuna in mayo, I swap it out for creamy Greek yoghurt. Not only does it cut down on fat and calories, but it gives a lovely tang that complements the tuna beautifully. I also keep the cheese but use a moderate amount of a good quality, sharp variety that melts just right without going overboard. The result? A lighter, guilt free tuna melt that doesn’t skimp on the ooey-gooey essence I adore. Perfect for when you want to treat yourself but still keep things on the healthier side. HEALTHY TUNA MELTS 〰️

Makes 6 slices

3 Tip Top Wholemeal Thins (opened)

425gm tuna

1/2 cup greek yoghurt

2 long pickled chillies (chopepd)

1/4 cup capers (chopped)

1 small shallot (finely diced)

1/2 bunch dill (washed, stalks removed, finely diced)

150gm shredded mozzarella

Cracked black pepper

Salt

EVOO

(Optional) Chilli flakes

Set oven to grill on highest temperature

  1. Start by opening up the thins, placing on baking tray inside facing up and drizzling some EVOO over the top. Place in oven under grill until golden. Place to side.

  2. In bowl mix together tuna, greek yogurt, pickled chillies, capers, shallot, dill, pinch of salt and a few crack black pepper. Using a spoon bring all together until homogenous.

  3. Spoon tuna mix evenly over the toasted thins, before topping with mozzarella evernly. Place in oven under grill again until the cheese has melted and has a solid char on it.

  4. Remove from oven, serve and top with chilli flakes if you want some spice.
