Time: 15 minutes hands on + overnight freezing

Start this recipe the night, or a few hours before drinking to freeze cubed watermelon. A quarter of watermelon makes around 4 daiquiris.

To make one…

1 heaped cup frozen watermelon pieces

60ml white rum

30ml lime

10ml simple syrup

2 ice cubes

Garnish: Watermelon wedge and fresh mint

Place all ingredients into a food processor and blitz hard and fast. Keep blitzing until you have a slushie texture. Pour into chilled glass and garnish heavily.
