COCO POPS CEREAL
Coco Pops is a popular chocolate flavoured breakfast cereal made by Kellogg’s, known for its crunchy texture, sweet chocolate taste and the way it makes milk turn chocolatey when eaten. The cereal is usually made from rice that is processed and shaped into small, puffed pieces, giving it its light and crispy texture. The recipe normally includes rice, sugar, cocoa powder, glucose syrup and flavourings to create its sweet chocolate flavour. That’s the main part I am wanting to avoid, is the add ons that are heavily processed so I reckon a simple homemade version is so much better for the body (plus very similar if not cheaper in price, depending how many brown rice puffs you can buy in bulk.
My version has four ingredients (plus optional salt) and all four ingredients are wonderfully naturally healthier ingredients. The coconut oil is the fat that helps coat and the puff, the high quality cocoa gives a rich chocolatey flavour and of course a bit of maple syrup for sweetness. It comes together really quickly and holds up in a dry spot for a few weeks, not like it ever lasts that long.

Time: 40 minutes + cooling
Serves: 6-8 bowls
45gm coconut oil
3 table spoons maple syrup
Pinch salt
120gm brown rice puffs
3 table spoons high quality cocoa powder
Preheat oven to 150 degrees Celsius on fan forced.
Place coconut oil into bowl and melt in microwave, once remove mix in the maple syrup and salt. In a large bowl add in brown rice puffs and cocoa powder and mix together so the cocoa coats the puffs in a dry environment. Once covered, mix everything until all the puffs are well covered before adding to a baking tray, and cover the tray evenly before placing into oven.
Bake in the oven for 30 minutes, giving a stir every 10 minutes. After it’s baked it the puffs should be dry and crunchy to the bite, with no softness so it holds longer. Allow to cool completely and then add container and seal, keeping at room temperature. Last about 2-3 weeks, but if they lose there crunch and become soft it’s time to get rid of them.
Enjoy with milk of choice or as a crunchy snack.
