CLASSIC GREEK SALAD
A classic Greek salad is a joyful celebration of simple, high quality ingredients: ripe, juicy tomatoes, crisp cucumbers, sweet red onion, briny Kalamata olives, chunky wedges of creamy feta and sometimes crunchy green capsicum, all dressed lightly with extra-virgin olive oil, a splash of red wine vinegar, and a scattering of dried oregano, no lettuce needed, so each ingredient shines. The balance of sweet, salty, tangy and herbal flavours, plus the contrast of textures, is what makes it unmistakably Greek and endlessly satisfying.
The recipe takes no more than 15 minutes to put together, and really is the ideal summers salad bowl for yourself or to be shared with friends along with a protein. The key to my recipe is the slight pickling of the red onions, which takes away the sharpness and allows a sweetness to come through to help layer in the more acidic tomatoes. CLASSIC GREEK SALAD 〰️
Time: 20 minutes
Serves: 3-4 as a side salad
1 Lebanese cucumber
4 tomatoes
200gm feta
20 kalamata olives, pitted
1/2 red onion, thinly sliced
1/4 cup white vinegar
1/2 lemon, juice and zest
1/4 cup olive oil
2 garlic cloves, minced
2 pinches sea salt
3 cracks black pepper
1 tbl sp dried oregano
Handful dill leaves
To begin place your red onion, white vinegar, lemon juice. zest and sea salt in a bowl and mix together throughly to help break down your red onion. This will pickle them slightly and take away that raw onion heat and also acts as the beginning of your dressing.
Begin chopping your cucumber and tomatoes and place into large salad bowl. Add in your olives.
To finish your onion dressing add in your garlic, black pepper, dill leaves and olive oil. Bring together your dressing and pour over your salad bowl, tossing it through your cucumber mix.
To finish your salad add your block of feta on top of the salad and finish with a dusting of your dried oregano. Enjoy altogether.
