CHRISTMAS ROCKY ROAD


Rocky road is a decadent no bake confection made from melted chocolate mixed with marshmallows and nuts, and sometimes biscuits, dried fruit or coconut, then chilled until firm and cut into squares. Its texture is a playful contrast of smooth chocolate, chewy marshmallow and crunchy inclusions.

While several countries claim variations, the treat most commonly traced back to early 20th century Australia and the United States. Australian versions appear in cookbooks and newspapers from the 1920s as a simple fridge slice, whereas American stories link the name to candy shop creations from roughly the same era. Both origins likely arose from home cooks seeking an economical, fridge set sweet during the Depression and postwar years, with the evocative name "rocky road" alluding to its lumpy, uneven surface.

You can really use your own flair with rocky road, adding in whatever you like on the candy front. I enjoy the combination of soft marshmallow, the crunchy clinkers and then the burst of m&m’s throughout. The candy canes giving it a festive touch, but feel free to omit and enjoy this treat all year round.

Time: 15 minutes + chilling 30 minutes

Serves: 12 large pieces

160 gm clinkers, chopped into thirds

145gm mini m&ms

280gm marshmallows, halved

2x 180gm 40% dark chocolate blocks

1x 180g 70% dark chocolate block

75gm milk chocolate block

3 candy canes, roughly chopped

Start by separating m&ms into two bowls, one for green and red and the other for the rest.

In a bowl place clinkers, marshmallows and random coloured m&ms. Melt your dark chocolate blocks and then pour over the top. Using a spoon mix through your mixture to make sure everything is properly covered.

Line a small baking tray and pour in mixture. Melt the milk chocolate and create a zebra effect by drizzling over fast and diagonally. Top with candy canes pieces and the green and red m&ms. Pop into the freezer for at least 30 minutes and then bring out and cut into desired pieces.
