BROWN SUGAR COOKIES


Brown sugar cookies are the chewy, caramel kissed that are delicately rich, warmly spiced and slightly molassesy thanks to that beautiful brown sugar, which gives them a deep colour and sticky, caramelised edges when baked. They’re perfect with a cuppa, easily dressed up with a sprinkle of sea salt or like mine which delves into a double drizzle of caramel and liqor 43 glaze, which gives the whole cookie a spice driven and sweet kick that really helps liven everything to a hundred.

Unlike a lot of cookie recipes on the internet I have tried to make these as quick as possible without loosing quality. The chill is essential, but in the end you are gifted with chewy discs of joy and all in under an hour which I reckon is a solid return.

BROWN SUGAR COOKIES 〰️

Time: 1 hour

Serves: 8 cookies

110gm salted butter

130gm brown sugar

1 large egg

1 table spoon vanilla essence

150gm plain flour

1.5 tea spoons baking soda

2 pinches sea salt

Caramel (optional)

Preheat oven to 170 degrees celcius fan forced.

Place butter into a small pot to brown. Pop over medium low heat and allow to melt, keep a rubber spatula close by to stir. The butter will melt and then begin to bubble, as it goes it will brown and the milks solid will brown, so it’s important to keep stirring to make sure the solids don’t burn. Once browned pour into large mixing bowl and allow to cool whilst you prep the ingredients.

To the brown butter add in the brown sugar, egg and vanilla essence and whisk hard until to smooth and combined. Fold through the flour, baking soda and salt until homogenous. Place in freezer for 15 minutes to chill. Then bring out and scoop out 8 even balls and place on lined baking tray and then place back in freezer for another 15 minutes to chill.

Once chilled, place in oven to bake for 10-12 minutes, or until cooked through and lightly browned on the rim. Remove from oven and enjoy as is or top with my homemade caramel and licor 43 glaze (recipe below).

Licor 43 Glaze (optional)

150gm confectioner sugar

1 table spoon boiling water

2 table spoons licor 43*

*Licor 43 is a bright golden, sweet Spanish liqueur with a distinct vanilla flavour. Crafted in Cartagena, Spain, from a closely guarded family recipe of exactly 43 natural ingredients, it perfectly balances citrus, botanicals, and vanilla notes.

In a bowl add all 3 ingredients and mix with a spoon until smooth, then add a dash of boiling water to get a pourable consistency for drizzling over the cookies in a zebra stripe fashion.
