BABY SNAPPER BURGER


This baby snapper burger is such a wonderful way to use up extra roasted fish. Mixed with a bunch of pickles and flavours, with fresh gem lettuce to give it some crunch.

BABY SNAPPER BURGER 〰️

Time: 10 minutes (with the fish already cooked)

Seeded burger bun

Leftover roasted snapper (fig leaf roasted snapper recipe)

Finely diced pickles

Finely diced capers

Mayonnaise

Yellow mustard

Fresh dill

Baby gem lettuce leaves

Sea salt, to taste

EVOO

Start by creating a little snapper mix. Add your snapper broken up into a bowl, before adding in pickles, capers, mayo, mustard and some finely chopped dill (Portion the the amount of snapper your using, you still want the fish to be the hero. Sea salt and EVOO to taste at the end.

Toast the inside of your bun on a pan with some oil. Top build squirt a bit of mayo the bottom, add three pieces of lettuce, top with snapper mix, fresh dill and fresh cut pickles, before enclosing with top bun.
